  4. Tomatoes (2, chopped)
  5. Yogurt (1/2 cup)
  6. Ginger-Garlic Paste (2 tablespoons)
  7. Biryani Masala (2 tablespoons)
  8. Red Chili Powder (1 teaspoon)
  9. Turmeric Powder (1/2 teaspoon)
  10. Ghee (2 tablespoons)
  11. Cooking Oil (4 tablespoons)
  12. Fresh Coriander (a handful, chopped)
  13. Fresh Mint (a handful, chopped)
  14. Saffron strands (a pinch, soaked in warm milk)
  15. Cashews and Raisins (for garnish)
  16. Salt (to taste)
  17. Water (4 cups)

  1. Marination of Chicken:
    • In a large bowl, mix chicken pieces with yogurt, half of the ginger-garlic paste, biryani masala, red chili powder, turmeric powder, and salt.
    • Allow the chicken to marinate for at least 1-2 hours or overnight for enhanced flavor.
  2. Preparation of Rice:
    • Wash and soak the basmati rice in water for 30 minutes.
    • In a large pot, bring water to a boil, add salt, and cook the rice until it’s 70% cooked.
    • Drain the water and set the rice aside.
  3. Cooking the Chicken:
    • In a heavy-bottomed pan, heat oil and ghee.
    • Add sliced onions and sauté until golden brown.
    • Add the remaining ginger-garlic paste and cook until the raw smell disappears.
    • Add chopped tomatoes and cook until they become soft.
    • Add marinated chicken and cook until it’s partially cooked and the masala coats the chicken evenly.
  4. Layering the Biryani:
    • In a heavy-bottomed pot, layer half of the partially cooked rice.
    • Add the chicken masala over the rice layer.
    • Sprinkle chopped coriander and mint leaves.
    • Layer the remaining rice over the chicken masala.
    • Drizzle saffron-infused milk and sprinkle chopped coriander and mint leaves.
  5. Dum Cooking:
    • Seal the pot with a tight-fitting lid or aluminum foil to trap the steam.
    • Cook on low heat for 20-25 minutes, allowing the flavors to meld and the rice to cook completely.
  6. Garnish and Serve:
    • In a separate pan, fry cashews and raisins in ghee until golden brown.
    • Garnish the Chicken Biryani with the fried cashews and raisins.
    • Serve hot with raita or a side salad for a delightful meal.
