– 4 boneless, skinless chicken breast halve – 1 cup all-purpose flour – 2 eggs, beaten – 1 cup panko bread crumb – 1/2 cup grated Parmesan cheese – 1/4 cup olive oil – 1/2 cup marinara sauce – 1 cup shredded mozzarella cheese

1. Pound the chicken breasts to 1/4-inch thickness.  2. In a shallow dish, combine the flour, salt, and pepper. 3. In another shallow dish, beat the eggs.

4. In a third shallow dish, combine the panko bread crumbs and Parmesan cheese.

5. Dredge the chicken cutlets in the flour mixture, then the egg mixture, and then the bread crumb mixture.
