Ingredients: – 1 pound bitter gourd, peeled and cut into 1-inch piece – 1 pound drumstick, cut into 1-inch piece – 1 pound potato, peeled and cut into 1-inch piece – 1 pound eggplant, peeled and cut into 1-inch piece – 1/2 cup mustard oil – 1 teaspoon panchphoron (Bengali five-spice blend)

Ingredients: – 1 tablespoon turmeric powder – 1 teaspoon salt – 1/2 teaspoon sugar – 1/4 cup poppy seeds paste – 1/4 cup mustard paste – 1/4 cup ginger paste – 1 cup milk – 1 tablespoon ghee

Instructions: 1. Heat the mustard oil in a large pot over medium heat. Add the panchphoron and fry for 30 seconds, or until fragrant.

3. Add the turmeric powder, salt, and sugar and stir to combine.

Tips: – For a milder shukto, you can remove the seeds from the bitter gourd.
